Russian scientists show tremendous interest in studying quality grape wines.And who wouldn't?
Wine is known to be extremely rich in phenol compounds, which in their turn show well-defined antioxidant activity. Therefore, wines should slow down ageing process and make vessel walls stronger, as well as deal with other health aspects.
Russian researchers found several wines that can be more useful to human beings than others. Scientists investigated properties of table wines, made from Sauvignon Blanc, Chardonnay, Merlot and Cabernet Sauvignon grapes, grown at various vineyards. All wines displayed same concentration of phenol compounds, however, their antioxidant activity varied significantly.
Spectophotometery and chromatography revealed that red wines, containing quercetin and (+) catechin, and white wines with high content of caffeic acid and (+) catechin were much stronger antioxidants than other wines.
