Instant wine maturation

Chinese researchers have developed a method of maturing wine instantly by means of an electrical current.
As reported in the science publication New Scientist, researchers at Guangzhou University passed an electrical current through a young red wine, causing it to mature within a matter of minutes. A group of sommeliers confirmed afterward that the experiment had been successful.
It is not yet certain what reactions may have taken place in the wine. According to the report, the electrical fields add a reliable effect on a young Cabernet Sauvignon that was subjected to the current for eight minutes. An analysis showed that reactions had taken place between acids and alcohol, and that esters had been formed.
Although it is still uncertain whether white wines can be treated in the same way, it appears several Chinese wine producers have already invested in the new method.
