A kind of distilled spirit peculiar to China, it derives from distilling unstrained spirits or fermented mash of starch or sugar-containing material. It has many names, such as white spirit, Laobaigan, Shaodaozi, and the like. Colorless (or slightly yellow) and transparent, the distilled spirit has a pure fragrance and a lingering sweet taste. High in alcohol content, it has esters-dominated compound fragrance after process of storage and aging.
