Vinomotions promoted an unique wine tasting event at the IVY Worli, Mumbai on last 19th October’12 with Spanish Cava and Chocolates aptly named as “ ChoCaVa Party” with lot of fun and galore in line with the true Iberian spirit.
The promoters selected two fine Cava from Spain : Mont Ferrant Reserva Cava (vintage 2008) and Rovira Baques Cava Brut –for this special night !
Firstly, the Mont Ferrant Cava Brut Reserva which had a brilliant clear appearance of yellow with golden tinges having fragrances of tropical fruit with pastry cream and had a powerful and fresh finish in the palate. With very fine bubbles - It paired extremely well with the “ LADY in RED “ a dark chocolate ball with elegant raspberry truffle inside.
Secondly, the Rovira Baques Cava Brut with Classic style sparkling, which appeared yellow with light green and on the nose was complex fruity aromas with Long acidity in taste. Medium size bubbles with a pleasant fizz which went very nice with “RUM TRUFFLE” a blend of butter , rum in a delicate dark chocolate ball.
The leading grapes used in Cava are parellada, macabeo and xarel-lo — which are completely different from the pinot noir and chardonnay in Champagne.
The interesting fact is that both these Cava producers from Catalunya region, use the traditional sparkling wine method by creating the bubbles in the fermentation inside the bottles rather than in large tanks which some mass producers adopt for commercial reason.
The exclusive chocolates from CVADO1502 which was paired with these CAVA - were all created by master chocolatiers across Europe and are only offered to the members of the Chocolate Club in India founded by Pankaj & Pavan Nagori. CVADO1502 get a new collection every month & never repeated.
The name CVADO1502, was derived from the Latin word E'vado meaning 'Escape', so CVADO means 'Escape in the world of Chocolates' & 1502 is the year cocoa beans first reached Europe by Christopher Columbus after his fourth visit to the new world.
The golden rules of pairing chocolates to wines is to tally with similar “weight”, so heavy flavored chocolates go with heavy wines; more delicately flavored chocolates with lighter wines. Alternatively, one could match the chocolates to wines with similar flavors (for example almonds, hazelnuts, cedar, spice, berries and forest fruits, creaminess, etc)

Another interesting Rosie which was served that night was “Pizzetto” and as the name suggested it pairs superbly with Pizza. This wine gives a wonderful feeling at the first sip and then a surprise after taste sensation. The making of Pizzetto follows the same stringent principle of second fermentation for creation of the small natural Co2. This wine is ratified as P3 Partner to pair with Pizza, Pasta and Paella since the wine washes the palate completely and enhances the taste of paired food.
Helena & Mumbai Mariachis gave an exceptionally live performance of flamenco jazz that night and kept the guest captivated till the end- when the Master of Ceremony Savio D’sa took the centre stage to shower the Question & Answer session and give away prizes containing Spanish delicassens to the guests.
Vinomotions also offered other Spanish wines from their Portfolio like the famous Vina Tondonia Reserva (Vintage 2001) from Rioja, Red & White from Baron de Turis and Luz del Mediterraneo Muscat from Valencia.
